  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 large, diced Red bell pepper
  • 1 medium, sliced Zucchini
  • 2 cups Broccoli florets
  • 1 cup, halved Cherry tomatoes
  • 0.5 cup Low-sodium chicken broth
  • 1.5 cups Shredded sharp cheddar cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside on a plate.
