Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 0.25 cup all-purpose flour
  • 4 cups chicken broth
  • 2 large russet potatoes, peeled and diced
  • 2 cups cooked chicken, shredded or diced
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

In a large pot or Dutch oven, melt the butter over medium heat.

Step 2

Add the diced onion, carrots, and celery. Cook for 5-6 minutes until the vegetables are softened, stirring occasionally.

Step 3

Stir in the minced garlic and cook for another minute, until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir to coat evenly. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 5

Gradually pour in the chicken broth while stirring constantly to prevent lumps from forming.

Step 6

Add the diced potatoes to the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer for 10-12 minutes, or until the potatoes are tender.

Step 7

Stir in the cooked chicken, milk, and heavy cream, and heat through (do not let it boil to avoid curdling).

Step 8

Gradually add the shredded cheddar cheese, stirring constantly until the cheese is completely melted and the chowder is creamy.

Step 9

Season with salt and black pepper, adjusting to taste.

Step 10

Remove the pot from the heat and let the chowder rest for 5 minutes to thicken slightly.

Step 11

Ladle the chowder into bowls and garnish with chopped parsley, if desired. Serve warm and enjoy!
