Ingredients

  • 350 grams Sharp cheddar cheese
  • 150 grams Gruyère cheese
  • 240 milliliters Dry white wine
  • 1 clove Garlic
  • 1.5 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 0.5 teaspoons Ground mustard
  • 0.25 teaspoons Hot sauce
  • 0.25 teaspoons Freshly ground black pepper
  • 0 as needed Bread cubes, vegetables, or other items for dipping

Directions

Step 1

Grate the cheddar cheese and Gruyère cheese into a large bowl. Toss the grated cheeses with the cornstarch until evenly coated.

Step 2

Peel the garlic clove and cut it in half. Rub the inside of your fondue pot or a medium saucepan with the garlic to infuse it with flavor. Discard the garlic after use.

Step 3

Pour the white wine into the fondue pot or saucepan and heat over medium heat until it begins to simmer, but do not let it boil.

Step 4

Reduce the heat to low, then add the grated cheese mixture one handful at a time, stirring constantly with a wooden spoon or silicone spatula until the cheese is fully melted and smooth before adding more.

Step 5

Once all the cheese is melted, stir in the lemon juice, ground mustard, hot sauce, and black pepper until combined. Taste and adjust seasonings if needed.

Step 6

Transfer the fondue to a prepared fondue pot heated with a low flame if it was prepared in a saucepan.
