Ingredients

  • 2 pounds Ground beef
  • 0.5 pounds Ground pork
  • 1 cup Bacon
  • 1 cup Breadcrumbs
  • 1 cup Cheddar cheese
  • 0.5 cup Milk
  • 2 large Eggs
  • 1 medium Yellow onion
  • 2 large Garlic cloves
  • 2 tablespoons Worcestershire sauce
  • 0.5 cup Ketchup
  • 2 tablespoons Brown sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

Chop the bacon into small pieces. In a skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and set it aside on a paper towel-lined plate to drain.

Step 3

Finely dice the onion and mince the garlic. In the same skillet with bacon grease, sauté the onion until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute. Set aside to cool.

Step 4

In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, shredded cheddar cheese, milk, eggs, Worcestershire sauce, cooled onion and garlic mixture, parsley, salt, black pepper, and paprika. Mix gently with clean hands until just combined. Avoid overmixing to keep the meatloaf tender.

Step 5

Fold the cooked bacon pieces into the meat mixture.

Step 6

Shape the mixture into a loaf and place it on the prepared baking sheet or in a loaf pan.

Step 7

In a small bowl, whisk together the ketchup, brown sugar, and Dijon mustard. Spread this glaze over the top of the meatloaf.

Step 8

Bake the meatloaf in the preheated oven for 60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 9

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This step allows the juices to redistribute and keeps the loaf moist.

Step 10

Slice and serve the meatloaf warm with your favorite sides, such as mashed potatoes or roasted vegetables.
