Ingredients

  • 1 loaf Baguette
  • 3 tablespoons Olive oil
  • 2 cloves Garlic
  • 4 medium Tomatoes
  • 6 leaves Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1.5 cups Sharp cheddar cheese (shredded)
  • 2 tablespoons Balsamic glaze

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette into 1/2-inch thick slices, about 12-14 pieces. Lay them out on a baking sheet.

Step 3

Brush each slice with olive oil on both sides. Place the baking sheet in the oven and toast the bread for 6-8 minutes, or until golden brown.

Step 4

While the bread is toasting, finely mince the garlic and dice the tomatoes into small cubes. Transfer the garlic and tomatoes to a medium-sized mixing bowl.

Step 5

Thinly slice the basil leaves into ribbons (chiffonade) and add them to the bowl. Season the mixture with salt and black pepper, and stir until well combined. Set aside.

Step 6

Remove the toasted baguette slices from the oven. Sprinkle a generous amount of shredded cheddar cheese on top of each slice.

Return the baking sheet to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
