Ingredients

  • 1.25 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Baking soda
  • 3 tablespoons Light butter or vegan spread
  • 0.5 cups Low-fat shredded cheddar cheese
  • 0.5 cups Low-fat buttermilk
  • 2 tablespoons Egg whites
  • 2 tablespoons Chopped chives (optional)
  • 1 serving Cooking spray or parchment paper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat it with cooking spray.

Step 2

In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, salt, and baking soda.

Step 3

Cut the light butter into small chunks and add it to the dry ingredients. Using a pastry blender or your fingers, mix until the butter is evenly dispersed and the mixture resembles coarse crumbs.

Step 4

Stir in the shredded cheddar cheese and chopped chives (if using).

Step 5

In a small bowl, whisk together the low-fat buttermilk and egg whites. Pour this mixture into the dry ingredients, stirring gently just until combined. Be careful not to overmix.

Step 6

Using a spoon or a small scoop, drop the dough onto the prepared baking sheet, creating 8 evenly sized biscuits. Leave space between each biscuit for even baking.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the tops are golden brown and a toothpick inserted into the center of a biscuit comes out clean.

Step 8

Remove from the oven and allow the biscuits to cool slightly on a wire rack. Serve warm.
