Ingredients

  • 2 whole bagels
  • 4 large eggs
  • 1 cup (shredded) cheddar cheese
  • 2 tablespoons milk
  • 1 teaspoon unsalted butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon (chopped, optional) parsley

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with unsalted butter.

Step 2

Slice the bagels in half horizontally and place them cut-side up on the prepared baking sheet.

Step 3

Using a spoon, gently press down in the center of each bagel half to create a shallow well. Be careful not to tear through to the bottom.

Step 4

In a medium bowl, crack the eggs and whisk them with the milk, salt, and black pepper until fully combined.

Step 5

Pour the egg mixture evenly into the wells of each bagel half, dividing it between all four halves.

Step 6

Sprinkle the shredded cheddar cheese generously over the egg mixture in each bagel half.

Step 7

Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the eggs are set and the cheese is bubbling and golden brown.

Step 8

Carefully remove the baking sheet from the oven and let the bagel halves cool for 2 minutes.

Step 9

Garnish each bagel with chopped parsley, if desired, and serve warm.
