Preheat a panini press or large skillet over medium heat.
Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes. Drain on a paper towel-lined plate.
While the bacon cooks, wash and core the Granny Smith apple. Thinly slice it into rounds or half-moons, about 1/8 inch thick.
Butter one side of each slice of sourdough bread. Spread honey mustard on the opposite side of each slice.
