Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 2 tablespoons green onions, thinly sliced
  • 0.75 cup buttermilk, cold
  • 1 whole egg, beaten for egg wash
  • 1 tablespoon water (for egg wash)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Step 4

Stir in the shredded cheddar cheese, crumbled cooked bacon, and sliced green onions until evenly distributed.

Step 5

Make a well in the center of the mixture and pour in the cold buttermilk. Gently mix until a rough dough forms; avoid over-mixing.

Step 6

Turn the dough onto a lightly floured surface and knead gently just until it comes together. Pat or roll the dough into a 3/4-inch thick circle or square.

Step 7

Using a sharp knife or biscuit cutter, cut the dough into 8 equal wedges or rounds and place them on the prepared baking sheet.

Step 8

In a small bowl, whisk the beaten egg with the water to make an egg wash. Brush the top of each scone with the egg wash.

Step 9

Bake in the preheated oven for 18-22 minutes, or until the scones are golden brown and cooked through.

Step 10

Remove from the oven and transfer the scones to a wire rack to cool slightly before serving. Enjoy warm or at room temperature!
