  • 500 grams All-purpose flour
  • 250 milliliters Water
  • 5 grams Salt
  • 30 milliliters Vegetable oil (for dough)
  • 400 grams Ground lamb
  • 1 medium Onion, finely chopped
  • 15 grams Fresh parsley, minced
  • 3 grams Ground black pepper
  • 5 grams Salt (for filling)
  • 50 milliliters Water (for filling mixture)
  • 500 milliliters Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water and vegetable oil while stirring to form a soft dough.

Step 2

Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Step 3

While the dough is resting, prepare the filling. In a large bowl, mix the ground lamb, finely chopped onion, minced parsley, salt, and ground black pepper. Gradually add 50 milliliters of water to create a moist but not runny mixture.

Divide the rested dough into 8 equal portions and roll each piece into a ball.

On a floured surface, roll each dough ball into a thin circle, approximately 20 centimeters in diameter.
