Ingredients

  • 1 pound ground beef
  • 1 medium onion
  • 2 cloves garlic cloves
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned kidney beans
  • 15 ounces canned black beans
  • 1 packet store-bought chili seasoning packet
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 0.25 cup chopped green onions or scallions (optional)

Directions

Step 1

Dice the onion and mince the garlic cloves.

Step 2

Heat a large pot or Dutch oven over medium-high heat and add the olive oil.

Step 3

Once the oil is hot, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.

Step 4

Add the ground beef to the pot and break it apart with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until the beef is browned and fully cooked.

Step 5

Drain excess grease from the pot, if necessary, and return it to the stove.

Step 6

Stir in the chili seasoning packet, ensuring the beef is evenly coated.

Step 7

Add the canned diced tomatoes, kidney beans, black beans, and beef broth to the pot. Stir well to combine.

Step 8

Bring the chili to a gentle simmer over medium heat. Reduce heat to low and let it simmer for 10 minutes to allow the flavors to meld together.

Step 9

Season with salt and black pepper to taste.

Step 10

Serve hot in bowls. Top with shredded cheddar cheese, a dollop of sour cream, and chopped green onions for garnish, if desired.
