Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.25 teaspoon crushed red pepper flakes (optional)
  • 2 15-ounce cans canned black beans, rinsed and drained
  • 1 15-ounce can canned fire-roasted diced tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Add the minced garlic, ground cumin, smoked paprika, and crushed red pepper flakes (if using). Sauté for 1 minute, stirring frequently, until fragrant.

Step 4

Stir in the rinsed and drained black beans, fire-roasted diced tomatoes, and broth. Add the bay leaf.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Simmer for 20 minutes, allowing the flavors to meld together.

Step 6

Remove the bay leaf and use an immersion blender to partially blend the soup, leaving some beans whole for texture. Alternatively, transfer 1-2 cups of the soup to a blender, puree, and return to the pot.

Step 7

Season the soup with salt and black pepper. Taste and adjust seasoning as needed.

Step 8

Ladle the soup into bowls and garnish with freshly chopped cilantro, if desired.

Step 9

Serve warm with crusty bread or tortilla chips on the side.
