  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Ground nutmeg
  • 1 piece Bay leaf
  • 1 teaspoon Grainy mustard (optional)
  • 50 grams Melted butter (to seal, optional)

Directions

Step 1

Rinse the chicken livers under cold water and pat them dry with paper towels. Trim any connective tissue or fatty bits.

Step 2

In a large skillet, heat 50 grams of the butter and the olive oil over medium heat. Add the shallots and garlic, cooking until softened, about 2-3 minutes.

Step 3

Add the chicken livers to the pan along with the bay leaf, thyme, salt, and pepper. Cook over medium heat, turning occasionally, until the livers are browned on the outside but still slightly pink in the center, about 4-5 minutes.
