Ingredients

  • 6 pieces sausages (pork, chicken, or vegetarian)
  • 1 large onion

  • 400 grams canned crushed tomatoes
  • 250 ml chicken or vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Heat 1 tablespoon of olive oil in a large ovenproof skillet or casserole dish over medium heat.

Step 3

Add the sausages and fry them for 5–7 minutes, turning occasionally, until browned on all sides. Remove the sausages and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the chopped onion for 2–3 minutes until softened.

Add the minced garlic and cook for another 30 seconds until fragrant.

Stir in the chopped carrots, potatoes, and red bell pepper. Cook for 5 minutes, stirring occasionally.

Pour in the canned crushed tomatoes and chicken or vegetable stock. Stir well to combine.
