Rinse the glutinous rice in cold water several times until the water runs clear. Drain and set aside.
Peel and slice the ginger into thin strips or julienne pieces.
In a medium pot, combine the rinsed glutinous rice and 4 cups of water. Add the ginger slices. Bring to a boil over medium-high heat.
Once the mixture reaches a boil, reduce the heat to low, cover the pot, and let the rice simmer for about 25–30 minutes, stirring occasionally to prevent sticking.
While the rice cooks, prepare the syrup. In a small saucepan, combine the granulated sugar, palm sugar (or brown sugar), and 1/4 cup of water. Heat the mixture over medium heat, stirring until the sugar dissolves and forms a thick syrup—this should take 5–7 minutes.
Once the rice has absorbed most of the water and has a sticky consistency, pour the prepared syrup into the pot. Add a pinch of salt and gently stir to combine all ingredients.
Cook the mixture on low heat for an additional 10–15 minutes, stirring occasionally, until the rice is glossy and fully coated in the ginger-infused syrup.
Remove the pot from heat and allow it to cool slightly before serving.
To serve, spoon the sweet ginger rice into bowls. If desired, garnish with toasted sesame seeds for added flavor and texture.
