Ingredients

  • 2 whole Ripe avocados
  • 1 large Cucumber
  • 6 oz Chavrie goat cheese
  • 1 cup Plain Greek yogurt
  • 1.5 cups Vegetable stock
  • 2 tbsp Fresh lime juice
  • 2 tbsp Fresh dill (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil (optional for garnish)
  • 2 tbsp Chopped cucumber or dill (optional for garnish)

Directions

Step 1

Cut the avocados in half, remove the pits, and scoop out the flesh. Set aside.

Peel the cucumber and chop it into chunks.

In a blender or food processor, combine the avocado flesh, cucumber chunks, Chavrie goat cheese, plain Greek yogurt, and vegetable stock. Blend until smooth.
