Ingredients

  • 6 large Russet potatoes
  • 1 medium Yellow onion
  • 4 large Eggs
  • 3 tablespoons All-purpose flour
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 7 tablespoons Vegetable oil
  • 1 teaspoon Baking powder

Directions

Step 1

Preheat your oven to 450°F (230°C). Place an empty 9x13-inch baking dish or sheet pan in the oven to heat while you prepare the kugel mixture.

Step 2

Peel the potatoes and onion. Using a food processor with a grating attachment or a hand grater, shred the potatoes and onion together. Transfer the mixture to a clean kitchen towel and wring out as much liquid as possible over the sink.

Step 3

In a large mixing bowl, combine the shredded potato and onion mixture with the eggs, flour, salt, black pepper, and baking powder. Mix well to ensure everything is evenly incorporated.

Step 4

Carefully remove the hot baking dish from the oven. Add 6 tablespoons of vegetable oil to the dish, swirling to coat the bottom evenly. The oil should sizzle when it touches the pan.

Step 5

Pour the potato mixture into the hot dish, spreading it out into an even, thin layer. Drizzle the remaining tablespoon of vegetable oil over the top to help it crisp up.

Step 6

Bake the kugel in the preheated oven for 40-50 minutes, or until golden brown and crispy on top and edges. Rotate the pan halfway through cooking for even browning.

Step 7

Once done, remove the kugel from the oven and allow it to cool for 5-10 minutes before slicing. Serve warm and enjoy the crispy, savory goodness!
