Ingredients

  • 1 cup Dry pinto beans
  • 6 cups Water
  • 1.5 pounds Ground beef (85% lean)
  • 0.5 pound Ground pork
  • 2 medium Onions, finely chopped
  • 2 cloves Garlic, minced
  • 3 cups Canned tomatoes, diced
  • 1.5 tablespoons Freshly grated Parmesan cheese
  • 1 tablespoon Chili powder
  • 1 tablespoon Ground cumin
  • 1 teaspoon Ground oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 medium Green bell pepper, finely chopped
  • 1 medium Red bell pepper, finely chopped
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Rinse the pinto beans under cold water and place them in a large pot. Add 6 cups of water and bring to a boil. Reduce the heat, cover, and let simmer for 1 hour, or until beans are tender. Drain and set aside.

Step 2

In a large skillet over medium heat, cook the ground beef and ground pork together until browned. Drain any excess fat and transfer the meat to a large pot.

Step 3

In the same skillet, add the chopped onions and minced garlic. Cook until the onions are translucent, about 5 minutes. Add them to the pot with the meat.

Step 4

Add the cooked pinto beans, diced tomatoes (with juices), grated Parmesan cheese, chili powder, cumin, oregano, salt, and black pepper to the pot. Stir to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 1 hour, stirring occasionally to prevent sticking.

Step 6

Add the chopped green bell pepper and red bell pepper to the pot. Stir and continue cooking for another 30 minutes.

Taste and adjust seasoning with additional salt or spices as needed.
