Ingredients

  • 4 large Egg whites
  • 100 grams Granulated sugar
  • 500 ml Whole milk
  • 1 teaspoon Vanilla extract
  • 4 large Egg yolks
  • 50 grams Powdered sugar
  • 100 grams Fresh strawberries
  • 5 leaves Fresh mint leaves (optional)

Directions

Step 1

1. Separate the egg whites and yolks into two clean bowls.

Step 2

2. In a mixing bowl, beat the egg whites until soft peaks form using an electric whisk.

Step 3

3. Gradually add the granulated sugar to the egg whites, one tablespoon at a time, beating until stiff peaks are achieved. Set aside.

Step 4

4. In a large saucepan, heat the milk over medium heat until it starts to simmer. Do not let it boil.

Step 5

5. Using a spoon, scoop meringue into large quenelles (oval spoonfuls) and gently place them onto the simmering milk. Poach them for 30 seconds on each side, then transfer them to a plate lined with paper towels. Repeat until all meringue is poached.

Step 6

6. For the vanilla sauce, in a separate mixing bowl, whisk the egg yolks and powdered sugar until pale and creamy.

Step 7

7. Slowly pour the hot milk into the yolk mixture, whisking constantly to prevent curdling.

Step 8

8. Transfer the mixture back to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Do not let it boil. Stir in the vanilla extract.

Step 9

9. Strain the vanilla sauce through a fine-mesh sieve into a clean bowl and set aside to cool slightly.

Step 10

10. To serve, pour the vanilla sauce into individual serving bowls or glasses. Carefully place the poached meringue snowballs on top of the sauce.

Step 11

11. Garnish with fresh strawberries, mint leaves, or additional toppings of your choice. Serve chilled and enjoy!
