Ingredients

  • 1 cup Dried pinto beans
  • 4 cups Water
  • 1 pound Ground beef (80/20 lean-to-fat ratio)
  • 0.5 pound Ground pork
  • 2 medium Onions, finely diced
  • 2 medium Green bell peppers, finely chopped
  • 4 cloves Garlic cloves, minced
  • 2 cups Tomatoes, peeled and diced
  • 1 cup Tomato paste
  • 1 tablespoon Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper (optional, for heat)
  • 1 cup Cheddar cheese, shredded (for garnish, optional)

Directions

Step 1

Rinse the dried pinto beans thoroughly and soak them in water for at least 4 hours or overnight.

Step 2

Drain the soaked beans, then add them to a large pot with 4 cups of water. Bring to a boil, then reduce heat and simmer for 1 hour, or until tender. Drain and set aside.

Step 3

In a large, heavy-bottomed pot, brown the ground beef and ground pork over medium heat until fully cooked. Drain excess fat and set the cooked meat aside.

Step 4

In the same pot, add the diced onions and green bell peppers. Sauté until softened, about 5-7 minutes.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 6

Add the cooked pinto beans, browned meat, diced tomatoes, and tomato paste to the pot, stirring to combine.

Step 7

Sprinkle in the chili powder, ground cumin, salt, black pepper, paprika, and optional cayenne pepper for some extra heat. Mix well to coat all the ingredients evenly with the spices.

Step 8

Reduce the heat to low and cover the pot. Allow the chili to simmer gently for about 1 hour, stirring occasionally to prevent sticking.

Step 9

Taste and adjust seasoning as needed. Add a little more salt, pepper, or chili powder if desired.

Step 10

Ladle the chili into bowls and garnish with shredded cheddar cheese, if desired. Serve hot with your favorite sides like cornbread or crackers.
