Ingredients

  • 2 lbs Ground beef (80% lean)
  • 1 lb Ground pork
  • 1 28 oz can Canned tomatoes, diced
  • 1 6 oz can Tomato paste
  • 2 cups Kidney beans, cooked or canned and drained
  • 2 cups Pinto beans, cooked or canned and drained
  • 2 Onions, finely chopped
  • 1 Green bell pepper, diced
  • 4 Garlic cloves, minced
  • 4 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1.5 cups Beef stock
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium-high heat.

Step 2

Add the ground beef and ground pork to the pot, breaking them up with a wooden spoon. Cook until browned and fully cooked through, about 8-10 minutes. Drain excess fat if needed.

Step 3

Add the onions, green bell pepper, and garlic to the pot. Cook, stirring frequently, for about 5 minutes, or until the vegetables are softened.

Step 4

Stir in the chili powder, ground cumin, salt, and black pepper, making sure the spices coat the meat and vegetables evenly.

Step 5

Add the diced tomatoes, tomato paste, beef stock, kidney beans, and pinto beans to the pot. Stir well to combine.

Step 6

Reduce the heat to low, cover the pot, and let the chili simmer for 2 hours, stirring occasionally to prevent sticking.

Step 7

Taste the chili and adjust the seasoning if needed. If the chili is too thick, you can add a little more beef stock or water to reach your desired consistency.

Step 8

Serve hot, garnished with chopped parsley if desired. Pair with crusty bread or tortilla chips for a complete meal.
