Ingredients

  • 4 large Heirloom tomatoes
  • 3 tablespoons Extra virgin olive oil
  • 10 leaves Fresh basil leaves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Fresh thyme
  • 1 clove Garlic
  • 2 tablespoons Balsamic glaze
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash and dry the heirloom tomatoes, then slice each one into thick ½-inch slices.

Step 2

Peel and finely mince the garlic clove.

Step 3

Heat a large cast-iron skillet or grill pan over medium-high heat until very hot.

Step 4

Brush both sides of the tomato slices lightly with 2 tablespoons of olive oil and sprinkle with a pinch of salt and black pepper.

Step 5

Place the tomato slices in the hot skillet in a single layer (work in batches if necessary) and sear for 1-2 minutes on each side, until lightly charred but still holding their shape. Remove from the skillet and set aside on a plate to cool slightly.
