  • 4 pieces Bone-in pork chops
  • 2 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 large Apples (preferably Honeycrisp or Fuji), peeled, cored, and sliced
  • 0.33 cup Bourbon
  • 0.5 cup Apple cider
  • 2 tablespoons Brown sugar
  • 0.5 teaspoon Cinnamon
  • 4 sprigs Fresh thyme
  • 1 tablespoon Apple cider vinegar

Directions

Step 1

Pat the pork chops dry with a paper towel. Season both sides generously with kosher salt, black pepper, and smoked paprika.

Step 2

Heat a skillet or cast-iron pan over medium-high heat. Add olive oil, then carefully place the pork chops in the pan. Sear for 4-5 minutes on each side until a deep golden crust forms. Remove the pork chops and set aside on a plate.

Step 3

Reduce the heat to medium. In the same skillet, melt the unsalted butter. Add the apple slices and sauté for 3-4 minutes until they start to soften and caramelize slightly.
