Ingredients

  • 4 cups Shredded green cabbage
  • 2 cups Shredded red cabbage
  • 1 cup Shredded carrots
  • 4 stalks Green onions, thinly sliced
  • 1 cup Sliced almonds, toasted
  • 1 cup Sunflower seeds
  • 1 package Instant ramen noodles (uncooked), crumbled
  • 3 tablespoons Soy sauce
  • 4 tablespoons Rice vinegar
  • 2 tablespoons Sesame oil
  • 2 tablespoons Sugar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a large mixing bowl, combine the shredded green cabbage, red cabbage, shredded carrots, and sliced green onions. Toss to mix evenly.

Step 2

In a dry skillet over medium-low heat, toast the sliced almonds until golden brown and fragrant, about 3-5 minutes. Stir frequently to avoid burning. Remove from heat and let cool.

Step 3

Break the uncooked ramen noodles into small pieces and set them aside. Do not use the seasoning packet.

Step 4

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, salt, and black pepper to create the dressing. Adjust the seasoning to taste if needed.

Step 5

Pour the dressing over the cabbage mixture and toss thoroughly to coat all the vegetables.

Step 6

Add the toasted almonds, sunflower seeds, and crumbled ramen noodles to the coleslaw mixture. Toss gently to combine, ensuring the ingredients are evenly distributed.

Step 7

Let the coleslaw sit for 10-15 minutes to allow the flavors to meld and the noodles to slightly soften.

Step 8

Serve immediately as a side dish or refrigerate for up to 2 hours for a chilled option. Toss again before serving.
