Ingredients

  • 450 grams elbow macaroni
  • 60 grams unsalted butter
  • 40 grams all-purpose flour
  • 950 milliliters whole milk
  • 120 milliliters heavy cream
  • 300 grams cheddar cheese, shredded
  • 150 grams Gruyère cheese, shredded
  • 50 grams Parmesan cheese, grated
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons ground mustard
  • 100 grams panko breadcrumbs
  • 2 tablespoons olive oil (or melted butter)

Directions

Step 1

Preheat your oven to 190°C (375°F) and grease a large 9x13-inch baking dish.

Step 2

Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Step 4

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Cook over medium heat, stirring frequently, until the mixture thickens (about 5 minutes).

Step 5

Lower the heat and stir in the shredded cheddar, Gruyère, and Parmesan cheeses, one handful at a time, until fully melted and smooth.

Step 6

Season the cheese sauce with salt, black pepper, and ground mustard. Taste and adjust seasonings if needed.

Step 7

Add the cooked macaroni to the cheese sauce and stir to coat evenly.

Step 8

Pour the macaroni and cheese mixture into the prepared baking dish, spreading it out evenly.

Step 9

In a small bowl, mix the panko breadcrumbs with the olive oil (or melted butter) until evenly coated. Sprinkle the breadcrumb mixture over the macaroni and cheese.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the breadcrumbs are golden brown and the cheese is bubbling around the edges.

Step 11

Allow the baked macaroni and cheese to cool for a few minutes before serving. Enjoy!
