Ingredients

  • 6 cups yellow squash
  • 1 medium onion, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons butter
  • 2 pieces large eggs
  • 0.5 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish and set it aside.

Step 2

Wash and slice the yellow squash into thin rounds. Place the squash in a large pot and cover it with water. Add a pinch of salt, bring to a boil, and cook for 5-7 minutes until tender. Drain well and set aside.

Step 3

In a large skillet, melt 3 tablespoons of butter over medium heat. Add the chopped onion, and sauté for 3-5 minutes until softened and translucent.

Step 4

In a large mixing bowl, whisk together the eggs, sour cream, salt, and black pepper. Stir in the shredded cheddar cheese and the cooked onions until evenly combined.

Step 5

Gently fold the cooked squash into the mixture, being careful not to mash the squash.

Step 6

Transfer the squash mixture into the prepared casserole dish, spreading it out evenly.

Step 7

In a small bowl, mix the crushed Ritz crackers with 2 tablespoons of melted butter. Sprinkle the cracker topping evenly over the squash mixture.

Step 8

Bake the casserole in the preheated oven for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.

Step 9

Remove from the oven and let the casserole rest for 5-10 minutes before serving. Enjoy your warm, comforting Charlotte's Squash Casserole!
