Ingredients

  • 1 cup Yellow cornmeal
  • 0.5 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Granulated sugar
  • 0.75 cup Whole milk
  • 1 unit Large eggs
  • 2 tablespoons Unsalted butter (melted)
  • 1 cup Celery (diced)
  • 1 cup Onion (finely chopped)
  • 4 tablespoons Unsalted butter (for vegetables)
  • 1 teaspoon Poultry seasoning
  • 0.5 teaspoon Ground sage
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Chicken or turkey broth
  • 2 unit Large eggs (beaten)
  • 2 cups Day-old bread (crumbled)

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease an 8-inch square baking pan.

Step 2

In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, 1 teaspoon of salt, and sugar. Whisk to combine.

Step 3

Add the milk, 1 beaten egg, and melted butter to the dry ingredients. Mix until just combined.

Step 4

Pour the batter into the greased baking pan and bake for 20-25 minutes or until the top is golden and a toothpick inserted in the center comes out clean. Let the cornbread cool completely.

Step 5

Once cool, crumble the cornbread into a large mixing bowl. Add the crumbled day-old bread and mix to combine.

Step 6

In a skillet, melt 4 tablespoons of butter over medium heat. Add the diced celery and chopped onion, cooking until they are softened and translucent, about 5-7 minutes.

Step 7

Add the softened vegetables to the cornbread mixture. Sprinkle in the poultry seasoning, sage, 1 teaspoon of salt, and black pepper. Mix until evenly distributed.

Step 8

In the same skillet or a small saucepan, warm the chicken or turkey broth over low heat. Pour it over the cornbread mixture a little at a time, stirring until the mixture reaches a moist, but not soupy, consistency.

Step 9

Add the 2 beaten eggs to the mixture and stir thoroughly to combine.

Step 10

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

Step 11

Transfer the dressing mixture to the prepared baking dish, spreading it out evenly.

Step 12

Bake uncovered for 35-45 minutes, or until the top is golden brown and slightly crisp.

Step 13

Remove from the oven and let cool for 10 minutes before serving. Enjoy!
