Ingredients

  • 1 pound Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 19 ounces Red enchilada sauce
  • 12 pieces Corn tortillas
  • 3 cups Shredded Mexican blend cheese
  • 15 ounces Black beans, rinsed and drained
  • 1 cup Frozen corn, thawed
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Green onions, sliced (for garnish)
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 8 minutes. Drain any excess fat.

Step 3

Add the diced onion and minced garlic to the skillet with the cooked beef. Cook for 3-4 minutes until the onion is soft and translucent.

Step 4

Stir in the chili powder, cumin, salt, and black pepper. Mix well to evenly coat the beef mixture with the seasonings.

Step 5

Add the black beans and thawed corn to the skillet and stir to combine. Remove from heat and set aside.

Step 6

Spread a thin layer of enchilada sauce (about 1/2 cup) on the bottom of the prepared baking dish.

Step 7

Place a layer of corn tortillas (4 pieces) over the sauce, overlapping slightly to cover the bottom.

Step 8

Spread half of the beef mixture over the tortillas, followed by 1 cup of shredded cheese. Drizzle with 1/3 of the remaining enchilada sauce.

Step 9

Repeat the layers: another layer of tortillas, the remaining beef mixture, another 1 cup of cheese, and another 1/3 of the enchilada sauce.

Step 10

Top with a final layer of tortillas, the remaining enchilada sauce, and the last cup of shredded cheese.

Step 11

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 12

Remove the foil and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 13

Let the casserole cool for 5 minutes before garnishing with sliced green onions and chopped cilantro.

Step 14

Serve warm and enjoy your hearty enchilada casserole!
