Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 3 tablespoons Jerk seasoning
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves (minced)
  • 1 large Mango (diced)
  • 1 medium Red bell pepper (diced)
  • 1 small Red onion (finely chopped)
  • 2 tablespoons Cilantro (chopped)
  • 1 small Jalapeño (seeded and finely chopped)
  • 2 tablespoons Pineapple juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 cups Cooked white rice

Directions

Step 1

In a medium bowl, mix the jerk seasoning, lime juice, olive oil, and minced garlic to create a marinade.

Step 2

Rub the chicken thighs thoroughly with the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Step 3

While the chicken marinates, prepare the mango salsa by combining the diced mango, red bell pepper, red onion, cilantro, jalapeño, pineapple juice, salt, and black pepper in a bowl. Mix well and refrigerate until ready to serve.

Step 4

Preheat your oven to 400°F (200°C).

Step 5

Heat a large oven-safe skillet over medium-high heat. Place the marinated chicken thighs skin-side down in the skillet and sear for 3-4 minutes until golden brown.

Step 6

Flip the chicken thighs and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 7

Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Step 8

Serve the jerk chicken over a bed of cooked white rice and top with the fresh mango salsa. Enjoy your Charle S Caribbean dish!
