Ingredients

  • 500 grams Fresh okra (bhindi)
  • 2 medium, finely chopped Onions
  • 2 medium, finely chopped Tomatoes
  • 1 finely chopped Green chilies
  • 1 teaspoon, grated Ginger
  • 2 cloves, minced Garlic
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoons Cumin seeds
  • 0.5 teaspoons Red chili powder
  • 0.5 teaspoons Garam masala
  • 0 to taste Salt
  • 3 tablespoons Vegetable oil
  • 2 tablespoons, chopped (for garnish) Fresh cilantro

Directions

Step 1

Wash the okra thoroughly and pat them dry with a clean kitchen towel. Trim the ends and cut into 1-inch pieces.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the okra and cook for 7-8 minutes, stirring occasionally, until they lose their slimy texture and turn slightly crispy. Remove the okra and set aside.

Step 3

In the same skillet, add 1 tablespoon of vegetable oil. Add cumin seeds and let them splutter for a few seconds.

Step 4

Add the finely chopped onions and sauté until they turn golden brown, about 4-5 minutes.

Stir in the garlic, ginger, and green chili. Sauté for another minute until fragrant.

Step 6

Add the chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook for 5-6 minutes, stirring occasionally, until the tomatoes break down and the mixture becomes a thick gravy.

Step 7

Reduce the heat to low and add the cooked okra to the tomato-onion mixture. Mix well to coat the okra with the masala.

Step 8

Sprinkle the garam masala over the dish and cook for 3-4 minutes, allowing the flavors to meld together.

Step 9

Turn off the heat and garnish with freshly chopped cilantro.

Step 10

Serve hot with roti, paratha, or steamed rice.
