Ingredients

  • 2 cups Whole wheat flour
  • 2 tablespoons Gram flour (besan)
  • 0.5 cup Fenugreek leaves (methi), finely chopped
  • 0.25 cup Yogurt
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin seeds
  • 1 teaspoon Ginger paste
  • 1 teaspoon Garlic paste
  • 1 unit Green chilies, finely chopped
  • 1 teaspoon Salt
  • 2 tablespoons Oil (for the dough)
  • 0 as needed Water
  • 0 as needed Oil (for cooking)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, gram flour, chopped fenugreek leaves, turmeric powder, red chili powder, coriander powder, cumin seeds, ginger paste, garlic paste, green chilies, and salt.

Step 2

Add yogurt and 2 tablespoons of oil to the mixture. Gradually add water, a little at a time, and knead the into a soft, pliable dough. Once done, cover it with a damp cloth and let it rest for 10 minutes.

Step 3

Divide the dough into small, equal portions and shape them into balls.

Step 4

Roll each ball into a thin, round disc using a rolling pin. Dust with flour as needed to prevent sticking.

Step 5

Heat a skillet or tawa over medium heat. Place a rolled-out thepla onto the hot surface.

Step 6

Cook for about 30 seconds, then flip the thepla. Add a light drizzle of oil around the edges and on the surface. Cook for 30-40 seconds until light golden spots appear.

Step 7

Flip again and cook the other side similarly, adding a drizzle of oil if needed. Repeat until all the theplas are cooked.

Step 8

Serve hot with yogurt, pickle, or tea for a complete meal or snack.
