Ingredients

  • 500 grams Cauliflower
  • 250 grams Potatoes
  • 3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoons Asafoetida (hing)
  • 1 medium, finely chopped Onion
  • 1 large, finely chopped Tomato
  • 1 inch, grated Ginger
  • 4 cloves, minced Garlic
  • 2 finely chopped Green chilies
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Red chili powder
  • 1.5 teaspoons Coriander powder
  • 0.5 teaspoons Garam masala
  • 0.5 teaspoons Amchur (dry mango powder)
  • 1 teaspoon (or to taste) Salt
  • 2 tablespoons, chopped Cilantro (fresh coriander leaves)

Directions

Step 1

Wash the cauliflower and separate it into medium-sized florets. Peel and chop the potatoes into bite-sized cubes.

Step 2

Heat 3 tablespoons of oil in a large pan over medium heat.

Step 3

Add cumin seeds and let them splutter. Then add asafoetida (hing) and sauté for a few seconds.

Add the chopped onion and sauté until it turns golden brown, about 5 minutes.

Add the grated ginger, minced garlic, and green chilies. Cook for 1-2 minutes until fragrant.

Step 6

Stir in the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture, about 5-7 minutes.

Step 7

Add turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the onion-tomato mixture with the spices.

Step 8

Add the cauliflower florets and potato cubes to the pan. Mix thoroughly to ensure the vegetables are well coated with the spice mixture.

Cover the pan with a lid and let the vegetables cook on low heat for about 20 minutes. Stir occasionally to prevent sticking and ensure even cooking.

Once the vegetables are tender, add garam masala and amchur powder. Mix gently to combine.

Garnish the sabzi with freshly chopped cilantro. Serve hot with roti, paratha, or rice.
