Ingredients

  • 500 g New potatoes
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 Garlic cloves, minced
  • 2 tbsp Fresh parsley, chopped
  • 1 tbsp Fresh thyme leaves, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 Lemon, juiced
  • 8 Wooden or metal skewers

Directions

Step 1

Boil the new potatoes in a large pot of salted water for 10-12 minutes, or until just tender. Drain and let cool slightly.

If using wooden skewers, soak them in water for at least 15 minutes to prevent burning.

In a small saucepan, melt the butter over low heat. Stir in the minced garlic, parsley, thyme, salt, and black pepper. Remove from heat and set aside.
