Ingredients

  • 6 pieces Boneless, skinless chicken thighs
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 large Shallots, finely chopped
  • 4 Garlic cloves, minced
  • 12 ounces Wild mushrooms (such as shiitake, cremini, oyster), cleaned and sliced
  • 1 cup Dry Chardonnay wine
  • 3 cups Chicken stock
  • 0.5 cup Heavy cream
  • 1 tablespoon Fresh thyme leaves
  • 1 Bay leaf
  • 2 large Carrots, peeled and chopped into bite-sized pieces
  • 1.5 pounds Baby potatoes, halved or quartered
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1 teaspoon of black pepper. Dredge them lightly in the flour, shaking off any excess.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Add the chicken thighs and sear for 4-5 minutes on each side until golden brown. Remove the chicken and set it aside.

Step 3

Reduce the heat to medium and add butter to the same pot. Once melted, add the shallots and sauté for 2-3 minutes until softened. Stir in the garlic and cook for another minute until fragrant.

Step 4

Add the wild mushrooms and cook for 5-7 minutes, stirring occasionally, until they release their moisture and become golden brown.

Step 5

Pour in the Chardonnay and deglaze the pot, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to slightly reduce the wine.

Step 6

Add the chicken stock, heavy cream, thyme leaves, bay leaf, carrots, and potatoes. Stir to combine, then return the chicken thighs and any accumulated juices to the pot.

Step 7

Bring the stew to a gentle boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes, or until the chicken is tender and the vegetables are fully cooked.

Step 8

Remove the bay leaf and adjust seasoning with additional salt and pepper to taste. If desired, garnish with fresh parsley before serving.

Step 9

Serve the Chardonnay Chicken Wild Mushroom Stew warm, optionally with crusty bread or a side of rice to soak up the flavorful broth.
