Ingredients

  • 1 bunch Swiss chard
  • 2 tablespoons Olive oil
  • 2 large Garlic cloves
  • 1 small Shallot
  • 2 tablespoons Dijon mustard
  • 1 cup Heavy cream
  • 0.25 cup Vegetable broth
  • 2 teaspoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Wash the Swiss chard thoroughly and pat it dry. Remove the stems from the leaves and chop the stems into small pieces. Slice the leaves into ribbons and set aside separately.

Step 2

Peel and finely mince the garlic cloves. Finely dice the shallot.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped chard stems and sauté for 3-4 minutes until they begin to soften.

Step 4

Add the minced garlic and diced shallot to the skillet, and sauté for another 1-2 minutes until fragrant.

Step 5

Stir in the sliced chard leaves and cook for 2-3 minutes, stirring frequently, until they are wilted but still vibrant in color. Remove the chard mixture from the skillet and set aside.

Step 6

In the same skillet, lower the heat to medium-low and whisk together the Dijon mustard, heavy cream, and vegetable broth. Let the mixture simmer gently for 2-3 minutes to thicken slightly.

Step 7

Stir in the lemon juice, salt, black pepper, and red pepper flakes (if using) into the sauce. Taste and adjust the seasonings as needed.

Step 8

Add the cooked chard back into the skillet and toss to coat it thoroughly in the Dijon mustard sauce. Cook for another 1-2 minutes to ensure everything is heated through.

Step 9

Serve immediately as a side dish or light vegetarian main, garnished with additional pepper or a sprinkle of lemon zest if desired.
