Ingredients

  • 3 large eggs
  • 1 cup Swiss chard leaves
  • 0.5 cup cheddar cheese
  • 2 tablespoons whole milk
  • 1 tablespoon butter
  • 1 teaspoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse and finely chop the Swiss chard leaves, discarding the tough stems.

Step 2

Grate the cheddar cheese and set aside.

Step 3

In a medium bowl, whisk the eggs, milk, salt, and pepper until fully combined and frothy.

Step 4

Heat the olive oil in a non-stick skillet over medium heat. Add the chopped Swiss chard and sauté for 2-3 minutes until wilted. Remove the chard from the skillet and set aside.

Step 5

Reduce the heat to medium-low. Add the butter to the skillet and let it melt, swirling to coat the pan evenly.

Step 6

Pour the egg mixture into the skillet, tilting the pan as needed to spread it evenly. Let it cook undisturbed for 1-2 minutes, or until the edges begin to set.

Step 7

Sprinkle the sautéed Swiss chard and grated cheddar cheese over one half of the omelette.

Step 8

Once the underside is fully set and the top is mostly cooked, use a spatula to carefully fold the other half of the omelette over the filling.

Step 9

Cook for an additional 1-2 minutes to melt the cheese and finish cooking the eggs.

Step 10

Slide the omelette onto a plate, garnish as desired, and serve immediately.
