Ingredients

  • 500 grams Pork shoulder (cut into 1-inch cubes)
  • 120 ml Char Siu sauce
  • 30 ml Soy sauce
  • 30 ml Honey
  • 200 grams Fresh pineapple (cut into 1-inch chunks)
  • 15 ml Sesame oil
  • 8 pieces Steamed buns (store-bought or homemade)
  • 2 stalks Green onions (thinly sliced)
  • 0.5 Cucumber (thinly sliced)
  • 15 ml Rice vinegar
  • 2 grams Salt
  • 15 ml Vegetable oil

Directions

Step 1

In a large bowl, marinate the pork shoulder cubes with 100ml of Char Siu sauce, soy sauce, and honey. Cover and refrigerate for 30 minutes or up to overnight for deeper flavor.

Step 2

Heat a large skillet or wok over medium-high heat and add the sesame oil. Sear the marinated pork cubes on all sides until caramelized, about 5-7 minutes.

Step 3

Lower the heat to medium, add 60ml of water, and cover the skillet. Cook the pork for an additional 15 minutes, stirring occasionally, until tender and cooked through. Remove the lid and let the sauce reduce until sticky. Reserve 20ml of the Char Siu sauce for glazing later.

Step 4

In a separate skillet, heat the vegetable oil over medium-high heat. Add the pineapple chunks and cook for 4-5 minutes, turning occasionally, until they are caramelized and golden. Set aside.

Step 5

Prepare the steamed buns according to package instructions or make your own if desired. Keep them warm with a clean kitchen towel.

Step 6

In a small bowl, toss the sliced cucumber with rice vinegar and a pinch of salt to lightly pickle them. Let sit for 5-10 minutes.

Step 7

To assemble, open each steamed bun and brush the interior lightly with the reserved Char Siu glaze. Fill each bun with a few pieces of pork, a chunk of caramelized pineapple, a slice of pickled cucumber, and a sprinkle of sliced green onions.

Step 8

Serve the buns immediately while warm, and enjoy the sweet, savory, and tangy flavors in every bite.
