Ingredients

  • 500 g Pork shoulder (boneless)
  • 3 tbsp Hoisin sauce
  • 2 tbsp Honey
  • 2 tbsp Soy sauce (light)
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tsp Five-spice powder
  • 2 cloves Garlic (minced)
  • 2 drops Red food coloring (optional, for traditional char siu color)
  • 8 pieces Small tortillas
  • 100 g Cucumber (julienned)
  • 100 g Carrot (julienned)
  • 2 stalks Spring onions (sliced thinly)
  • 20 g Cilantro (chopped, optional)
  • 1 tbsp Sesame seeds (toasted, for garnish)
  • 2 tbsp Sriracha (optional)

Directions

Step 1

In a medium bowl, whisk together hoisin sauce, honey, soy sauce, Shaoxing wine, five-spice powder, minced garlic, and red food coloring (if using) to create the marinade.

Step 2

Cut the pork shoulder into long strips, about 2-3 cm thick, ensuring even sizes for consistent cooking. Add the pork to the marinade, ensuring all pieces are evenly coated. Cover and refrigerate for at least 2 hours or preferably overnight.

Step 3

Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil and place a wire rack on top.

Step 4

Place the marinated pork strips onto the wire rack, reserving any leftover marinade for basting.

Step 5

Roast the pork in the preheated oven for 30 minutes. After 30 minutes, brush the pork with the reserved marinade, flip the pieces, and brush again. Roast for an additional 15 minutes until caramelized and slightly charred at the edges.

Step 6

Once cooked, allow the pork to rest for 5 minutes before slicing it into thin, bite-sized strips.

Step 7

Warm the tortillas in a dry skillet over medium heat for 20-30 seconds on each side or until pliable.

Step 8

To assemble, place a few strips of char siu pork on each tortilla. Top with julienned cucumber, carrot, sliced spring onions, chopped cilantro (if desired), and a sprinkle of toasted sesame seeds.

Step 9

Drizzle with sriracha for some heat (optional) and serve immediately. Enjoy your Char Siu Pork Tortillas!
