Cut the pork tenderloin into long strips about 1.5 inches wide.
In a large mixing bowl, combine hoisin sauce, soy sauce, honey, Chinese five-spice powder, dark soy sauce, Chinese rice wine, sesame oil, red food coloring (if using), minced garlic, and grated ginger to create the marinade.
Add the pork strips to the bowl and coat them thoroughly in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight for best flavors.
Preheat your oven to 375°F (190°C).
Line a baking sheet with aluminum foil and place a wire rack on top. Remove the pork from the marinade and place the strips on the rack, reserving the marinade.
Roast the pork in the oven for 20 minutes.
Meanwhile, pour the remaining marinade into a small saucepan and bring to a boil. Simmer for about 3-5 minutes to thicken slightly.
After 20 minutes, remove the pork from the oven and baste it with the boiled marinade.
Return the pork to the oven and continue roasting for another 20-25 minutes, basting every 10 minutes until the pork is fully cooked and nicely glazed. The internal temperature should reach 145°F (63°C).
Allow the char siu to rest for 10 minutes before slicing and serving.
