  • 4 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 4 cloves Garlic cloves, minced
  • 8 ounces Cremini mushrooms, sliced
  • 1 tablespoon Fresh thyme leaves
  • 1.5 pounds Yukon Gold potatoes
  • 0.5 cup Heavy whipping cream
  • 0.25 cup Parmesan cheese, grated
  • 1 teaspoon Salt (for potatoes)
  • 0.5 teaspoon Ground black pepper (for potatoes)
  • 1 tablespoon Fresh parsley, chopped (optional garnish)

Directions

Step 1

1. Preheat the oven to 400°F (200°C).
