Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the insides and outsides with 1 tablespoon of olive oil. Place them upright in a baking dish and set aside.
Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced Cajun beef sausage and cook for 3-4 minutes until lightly browned. Remove and set aside.
In the same skillet, add the ground beef and cook until it is no longer pink, about 5-6 minutes, stirring occasionally. Drain any excess fat.
Add the chopped onion, minced garlic, and Cajun seasoning to the skillet with the ground beef. Cook for 2-3 minutes until the onion softens and becomes translucent.
Stir in the diced tomatoes (with their juices), cooked rice, browned sausage, salt, and black pepper. Cook for another 2-3 minutes, mixing well so the flavors combine.
Remove the skillet from heat and stir in the chopped parsley and half of the shredded cheddar cheese.
Spoon the filling mixture evenly into the prepared bell peppers, packing it slightly to ensure the peppers are full.
Sprinkle the remaining shredded cheddar cheese on top of each stuffed pepper.
Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.
Optional: Garnish with a sprinkle of Parmesan cheese and more parsley for an extra touch before serving.
