  • 1 cup Vegetable oil
  • 4 large Eggs
  • 2 teaspoons Vanilla extract
  • 3 cups Carrots (grated)
  • 0.5 cups Crushed pineapple (drained)
  • 0.75 cups Chopped walnuts or pecans (optional)
  • 2 cups Heavy whipping cream
  • 0.5 cups Powdered sugar
  • 8 ounces Mascarpone cheese
  • 1 teaspoon Vanilla extract (for Chantilly cream)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
