Ingredients

  • 2 cups Canned chickpeas (garbanzo beans)
  • 3 cups Fresh spinach leaves
  • 1 medium Yellow onion
  • 3 units Garlic cloves
  • 1 inch Fresh ginger
  • 2 medium Tomatoes
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Salt
  • 1 cup Water
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro leaves

Directions

Step 1

Drain and rinse the canned chickpeas in cold water. Set aside.

Step 2

Finely chop the onion, garlic, and ginger. Dice the tomatoes and roughly chop the spinach leaves.

Step 3

Heat the vegetable oil in a large skillet or saucepan over medium heat.

Step 4

Add the chopped onion and sauté for 3-4 minutes until soft and golden.

Add the garlic and ginger, and cook for another 1-2 minutes until fragrant.

Stir in the ground cumin, coriander, turmeric, garam masala, and red chili powder. Cook for 1 minute to toast the spices.
