Ingredients

  • 4 cups water
  • 1 piece cinnamon stick
  • 1 cone (about 3 ounces) piloncillo (or brown sugar)
  • 3.5 ounces unsweetened Mexican chocolate
  • 0.5 cup masa harina (corn flour)
  • 4 cups milk
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon salt

Directions

Step 1

In a medium-sized pot, combine 4 cups of water and a cinnamon stick. Bring to a boil over medium heat and simmer for 5 minutes to extract the cinnamon flavor.

Step 2

Add the piloncillo (or brown sugar) to the pot and stir until it dissolves completely. Keep simmering for another 2-3 minutes.

Step 3

Break the Mexican chocolate into smaller pieces and add it to the pot. Stir continuously until the chocolate has completely melted into the cinnamon-infused water.

In a small bowl, whisk the masa harina with 1 cup of milk until smooth and free of lumps.

Slowly pour the masa harina mixture into the pot while stirring constantly to prevent clumps from forming.

Add the remaining 3 cups of milk, vanilla extract, and salt to the pot. Stir well to combine.
