Ingredients

  • 150 grams unsalted butter
  • 200 grams granulated sugar
  • 100 grams brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 200 grams all-purpose flour
  • 50 grams cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 150 grams semi-sweet chocolate chips
  • 100 grams chopped pecans or walnuts
  • 200 grams soft caramels
  • 60 milliliters heavy cream

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x13-inch baking tin with parchment paper, allowing some overhang for easy removal.

Step 2

In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and stir in the granulated sugar and brown sugar until fully dissolved.

Step 3

Let the mixture cool slightly, then whisk in the eggs and vanilla extract until smooth.

Step 4

In a separate bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.

Step 5

Stir in the semi-sweet chocolate chips and chopped pecans or walnuts.

Step 6

Spread half of the chocolate mixture evenly into the prepared pan and bake for 10 minutes. Set aside to cool slightly.

Step 7

While the base is cooling, place the soft caramels and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until fully melted and smooth.

Step 8

Pour the caramel mixture over the partially baked base, spreading it evenly with a spatula.

Step 9

Drop spoonfuls of the remaining chocolate mixture over the caramel layer. Carefully spread it out without mixing the layers.

Step 10

Return the pan to the oven and bake for an additional 15 minutes or until the chocolate topping is set and slightly crisp around the edges.

Step 11

Remove from the oven and let the bars cool completely in the pan. Once cool, use the parchment overhang to lift the bars out of the pan and onto a cutting board.

Step 12

Cut into 12 equal squares or rectangles and serve. Store any leftovers in an airtight container at room temperature for up to 5 days.
