Ingredients

  • 500 grams button mushrooms
  • 4 tablespoons extra virgin olive oil
  • 4 units garlic cloves
  • 0.5 teaspoons red chili flakes
  • 60 milliliters dry white wine
  • 2 tablespoons fresh parsley
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Clean the mushrooms by gently brushing off any dirt or wiping them with a damp paper towel. Trim the stems if needed and cut larger mushrooms in half, leaving small ones whole.

Step 2

Finely mince the garlic cloves and chop the fresh parsley. Set them aside separately.

Step 3

Heat a large skillet or frying pan over medium heat and add the extra virgin olive oil.

Step 4

Once the oil is hot, add the minced garlic and red chili flakes. Sauté for about 30 seconds, stirring constantly, until fragrant but not browned.

Step 5

Add the mushrooms to the pan and toss to coat them evenly in the garlic-infused oil. Spread them out in a single layer and let them cook for 5-6 minutes, stirring occasionally.

Step 6

Season the mushrooms with sea salt and black pepper, then pour in the dry white wine. Stir well and let the wine reduce for 3-4 minutes, allowing the mushrooms to absorb the flavors.

Step 7

Once the mushrooms are tender and coated in a light sauce, remove the pan from the heat. Sprinkle the chopped fresh parsley over the mushrooms and give them a final toss.

Step 8

Serve the Champiñones Al Ajillo warm with crusty bread on the side to soak up the delicious garlic sauce. Enjoy!
