Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter

  • 3 cloves garlic, minced
  • 1 cup champagne (or sparkling white wine)
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a large skillet over medium heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil.

Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of butter. Add the chopped shallots and cook for 2 minutes until softened.
