Ingredients

  • 500 ml Champagne or sparkling wine
  • 100 grams Sugar
  • 4 sheets Gelatin sheets
  • 50 ml Water
  • 1 tablespoon Lemon juice
  • 100 grams Fresh berries (optional, for garnish)
  • 1 sprig Mint leaves (optional, for garnish)

Directions

Step 1

Place the gelatin sheets in a bowl of cold water and soak for about 5 minutes until softened.

Step 2

In a small saucepan, combine the water and sugar. Heat gently over low heat, stirring until the sugar has fully dissolved. Do not let it boil.

Step 3

Remove the saucepan from the heat. Squeeze the water out of the gelatin sheets and add them to the warm sugar syrup. Stir until the gelatin is completely dissolved.

Step 4

Add the lemon juice to the syrup and allow the mixture to cool slightly (a few minutes).

Step 5

Pour the champagne into a large mixing bowl. Slowly add the cooled gelatin mixture to the champagne, stirring gently to preserve as many bubbles as possible.

Step 6

Divide the champagne mixture evenly among six serving glasses or molds. If using fresh berries, add them now, gently submerging them into the liquid.

Step 7

Chill the glasses in the refrigerator for at least 4 hours, or until the jelly is fully set.

Step 8

Before serving, garnish the top with fresh berries and a sprig of mint leaves, if desired. Serve chilled and enjoy!
