  • 4 pieces boneless, skinless chicken breasts

  • 2 pieces garlic cloves, minced
  • 1 cup champagne (or sparkling wine)
  • 0.5 cup chicken stock
  • 0.25 cup heavy cream
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 4 pieces lemon wedges (optional, for serving)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, sear the chicken breasts for 3-4 minutes per side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium. Add the butter to the skillet and let it melt. Stir in the diced shallots and minced garlic, cooking for 2-3 minutes or until softened and fragrant.

Pour the champagne into the skillet to deglaze, scraping up any browned bits from the bottom of the pan. Allow the champagne to simmer for 2-3 minutes and reduce slightly.
