  • 4 pieces Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 pieces Shallots (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 cup Champagne or dry sparkling wine
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Fresh thyme (leaves only)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Dredge the chicken breasts in the flour, shaking off any excess.

Step 3

Heat a large skillet over medium heat and add 1 tablespoon of butter and 1 tablespoon of olive oil.

Sear the chicken breasts for 4-5 minutes on each side, or until golden brown. Remove from skillet and set aside.

In the same skillet, add the remaining butter and olive oil. Sauté the shallots for 2-3 minutes until softened.
